South-of-the-Border Loaded Sweet Potato

I got this recipe from watching The Biggest Loser on NBC.  Through the intermittent sniffles and clapping for the contestants as they finally overcome their fears or hindrances I wrote down the name of this recipe as they aired it on one of the episodes a few weeks back.  Later, I went to the website and found the actual recipe.  It is super simple, easy to make, and is actually really awesome even after reheating!  Score!  I found myself a quick, easy, and healthy HOT office lunch!

The South-of-the-Boarder Loaded Sweet Potato

I followed the directions as-is.  Let me tell you something though…I was a little skeptical about all the ingredients coming together to make 1 cohesive meal.  Sweet potatoes and salsa?  Greek yogurt? But seriously.  It was one of the best things I have ever made for dinner (besides filet mignon or that bacon loaf).

One pound of lean ground turkey is enough to make 4 of these delicious things.  Pat and I ended up taking them to lunch with us the next day.  We assembled them the night before, when we actually made dinner.  Leave off the Greek yogurt topping though because that won’t microwave well.  Everything else comes out as a delicious leftover and I just topped mine with some of the Greek yogurt that I threw in a small Tupperware container.

I hope you enjoy this Biggest Loser recipe.  I certainly did.  It was easy and it found a spot in the “keeper recipes” of all the recipes I end up trying.  We have had this a couple of times since the original recipe aired a few weeks ago.  Delicious and healthy!
